Chocolate Rebel Cookies: A Family Recipe

Rebel cookies are one of my family’s favorite recipes! I’ve been making them for years and always thought they were my grandma’s recipe. Until I discovered the recipe was given to my mom by a friend. Who knew?

No matter how it ended up in my mom’s hands, I’m sure glad it did! Now, my husband and kids are just as obsessed as I’ve always been.

A spin on classic double chocolate oatmeal cookies, this recipe is sweet, chewy, and made with the perfect tough of sweetness. It’s so good one cookie turns into two then three, and before you know it the whole batch has disappeared!

So, go ahead and double the recipe, because I already know you’re going to be a huge fan.

Ingredients

  • Sugar – Granulated sugar adds the perfect touch of sweetness to the cookie dough.
  • Butter – I recommend using unsalted butter for baking! Let it come to room temperature before you begin.
  • Egg – This acts as a bidner, holding the cookies together and enhancing their rich taste. I haven’t tested this recipe with egg substitutes and can’t guarantee your results if you do!
  • Cocoa Powder – Make sure to use unsweetened cocoa powder.
  • Flour – I like to use wheat flour to add a bit of an earthy flavor, but all-purpose flour or gluten-free flour works well, too.
  • Oatmeal – Look for rolled oats, also known as old-fashioned oats, for the best results. Look for certified gluten-free oats to keep these cookies gluten-free.
  • Chocolate Chips – I use dark chocolate chips, but semi-sweet, milk chocolate chips, or even white chocolate chips will taste great!

How to Make Easy Double Chocolate Oatmeal Cookies

Be sure to preheat your oven before you begin, and line a baking sheet with parchment paper.

  1. Cream the wet ingredients. Add the sugar, butter, egg, cocoa powder, and water to a large bowl. Use a hand mixer or stand mixer to cream the ingredients until smooth.
  2. Add the dry ingredients. In the same bowl, add the flour, oats, salt, baking soda, and chocolate chips. Mix until a smooth dough forms.
  3. Shape. Portion the cookie dough into tablespoon sized balls. Then, arrange them on the prepared baking sheet, leaving a bit of space in between each cookie.
  4. Bake. Transfer the baking sheet to the oven, and bake just until the tops of the cookies are just set and a little hardened to the touch.
  5. Cool. Allow the cookies to cool on the cookie sheet for a few minutes. Then, transfer them to a wire rack to cool completely. Enjoy!

How to Store

Store leftover cookies (if you have any) in an airtight container or sealable bag at room tempertaure for up to one week. I like to add a piece of white bread or cookie saver to the container to prevent them from drying out!

Freeze your double chocolate oatmeal cookies for up to three months! I recommend placing a piece of parchment paper between each cookie to prevent them from clumping together.

Or, you can freeze them on a baking sheet for a few hours. Then, transfer them to a sealable bag. Thaw in the fridge before serving.

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 1 egg
  • 2 Tablespoons water
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old fashioned rolled oats
  • 2 cups chocolate chips, dark or semi-sweet 10 ounce bag

Instructions

  • Preheat the oven to 350F degrees. In a large bowl, cream together the butter, sugar, cocoa powder, egg, and water until combined.

  • To the same bowl add the flour, baking soda, salt, oats and chocolate chips. Mix ingredients until a thick dough forms.

  • Using a 1 ½ Tablespoon cookie dough scoop, form the dough into balls and place on a cookie sheet lined with parchment paper or sprayed with non-stick cooking spray.

  • Bake for 10-12 minutes or until the tops of cookies are just set and a little hardened to the touch. The inside of the cookies will still be quite soft. Be careful to not over bake them.

  • Remove the cookies from the cookie sheet after 5 minutes and allow to fully cool on the baking rack. Store at room temperature in an airtight container for up to a week.
