Bite-size balls of energy are what you will find with these citrus-infused keto lime energy balls. Keto energy balls are loaded with shredded coconut, lime extract, almond butter, and more.

If you are feeling that 2 pm slump, grab one or two of these coconut lime energy balls and enjoy a sweet treat. This is a great keto snack to whip up and use to meal prep with and pack in your lunches and more.

A dairy-free, gluten-free, low carb, THM-S, and keto snack. These are great to make up and keep on hand for the perfect boost to keep me going when I feel like I am dragging a bit.

Can I Make These With Lemon Instead of Lime

If you prefer lemon over lime, go ahead and swap out the lemon. Either citrus works great, and you will find you could do half the mixture with lime, and the other half with lemon.

How To Make

Making these keto energy bites is so easy to do. Simply toss all your ingredients but the shredded coconut into a bowl, and use your hands (or a wooden spoon) to mix it all up. Make sure to really get all the ingredients incorporated.

Then you will cover the bowl and place in the fridge for around 15 minutes to let them set up a bit.

Once your dough has set up a bit, then you will want to use a cookie scoop (2 tablespoon size). You can grease your hands or get your hands wet. This will help the energy ball dough from sticking to your hands.

Roll into a ball and place on a parchment-lined pan. Then you will take your balls and roll in the coconut flakes.

Can I Swap Almond Butter In Recipe

If you are not wanting to use almond butter, you can reach for any other type of nut butter. The biggest thing is to make sure you read the label and ensure it has no extra added ingredients.

You could even use a natural peanut butter if you want more of a classic flavor. Just know that the texture and flavor will change a bit depending on what nut butter you reach for.

How To Store Energy Bites

I was to make around 17 energy bites out of this recipe. That leaves you with a good amount. You will want to place your energy bites in an airtight container and store in the refrigerator.

Now, if you go to stack your bites, I recommend doing a layer of wax paper between the bites. The reason being is they can stick together a bit.

Another thing to consider is freezing them. If you don't plan to eat them before they will dry out and go bad, place in a freezer friendly container. Then store in the freezer for 3-5 months.

When you want one, just remove from freezer and let thaw on the counter for 20-30 minutes and then enjoy! Or place them in the fridge overnight before you plan to eat them.

Instructions

  • In a bowl mix all the ingredients (except shredded coconut) and knead with your hand until all the ingredients are well combined and compact.

  • Place the dough in the refrigerator and let it sit for about 15 minutes before making the balls.

  • Wet your hands with water or oil in spray and make 17 balls of about 2 tablespoon each.

  • In a shallow plate add the shredded coconut, roll the balls into the coconut until these are completely covered.

  • Store the energy balls in an airtight container in the fridge.

Notes

  1. You can replace the Gentle Sweet for any other sweetener of your preference such as monk fruit or erythritol, keep in mind that the quantity may vary.
  2. If you do not have Gentle Sweet, you can use my DIY Gentle Sweet Recipe.
  3. You may use another nut butter or sunflower butter, always keeping in mind that it should be one that doesn’t have any added ingredients.
